Monster Pudding Cookie Bars

Soft and chewy peanut butter oatmeal cookie bars with a box of vanilla pudding mix and filled with M&Ms and chocolate chips. Everyone will love the soft and chewy texture of the cookie bars and the delicious peanut butter and chocolate flavors.

The cookie dough is made similar to a classic monster cookie dough, except for the addition of dry vanilla pudding mix whisked into the dry ingredients. The cookie dough is then pressed into a greased square baking dish and baked until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Monster Pudding Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 cup quick oats
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup M&Ms

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, pudding mix, salt, and baking soda. In a large bowl, mix together butter, peanut butter, and both sugars until fluffy.
  2. Add in the egg and vanilla extract and mix until smooth. Add in the flour mixture and mix until it is fully combined. Fold in the M&Ms and chocolate chips. Press the cookie dough evenly into a greased 8-inch square baking dish. Bake for 20-25 minutes.
