Monster Pudding Cookie Bars

Soft and chewy peanut butter oatmeal cookie bars with a box of vanilla pudding mix and filled with M&Ms and chocolate chips. Everyone will love the soft and chewy texture of the cookie bars and the delicious peanut butter and chocolate flavors.

The cookie dough is made similar to a classic monster cookie dough, except for the addition of dry vanilla pudding mix whisked into the dry ingredients. The cookie dough is then pressed into a greased square baking dish and baked until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Monster Pudding Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 cup quick oats
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup M&Ms

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, pudding mix, salt, and baking soda. In a large bowl, mix together butter, peanut butter, and both sugars until fluffy.
  • Add in the egg and vanilla extract and mix until smooth. Add in the flour mixture and mix until it is fully combined. Fold in the M&Ms and chocolate chips. Press the cookie dough evenly into a greased 8-inch square baking dish. Bake for 20-25 minutes.
