Soft and chewy pumpkin sugar cookies topped with candy eyes for Halloween. Everyone will love the soft and chewy texture of the cookies and the delicious pumpkin flavors. They make the perfect easy treat to bake this Halloween season.

The cookie dough is made just like a classic pumpkin sugar cookie dough. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through. Remove from the oven and top with the candy eyes.

Pumpkin Monster Eye Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 large egg
  • 1 teaspoon vanilla extract
  • candy eyes

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk flour, salt, baking soda, and ground cinnamon together. In a large bowl, mix together butter, pumpkin and both sugars until fluffy.
  • Add in the egg and vanilla extract until smooth. Add in the flour mixture and mix until it is fully combined. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
  • Remove from the oven and top with candy eyes.
