Monster Brownie Truffles

Quick and easy homemade brownie truffles made with baked brownies mixed with cream cheese and covered in melted chocolate chips made green with food coloring. Each truffle is decorated with a candy eye for Halloween. Everyone will love these easy treats this year.

The brownies are first baked and crumbled, then mixed with cream cheese until combined. Roll the mixture into balls and set onto a plate. Freeze the truffles while you melt the chocolate chips. Melt the chocolate chips in the microwave until it is fully melted and smooth. Stir in the food coloring and mix until it is fully green. Coat each truffle in the chocolate and set onto a plate. Decorate with candy eyes and let sit until it is completely set.

Monster Brownie Truffles

Ingredients
  

  • 2 cups baked and crumbled brownies
  • 8 oz. cream cheese, softened
  • 12 oz. white chocolate chips
  • green food coloring
  • candy eyes

Instructions
 

  • In a large bowl, mix brownies and cream cheese together until combined. Roll the mixture into balls and set onto a plate. Freeze for at least 20 minutes. Place chocolate chips into a microwave-safe bowl, and heat in the microwave in 30-second intervals, stirring well until it is fully melted and smooth.
  • Stir in the food coloring. Coat each truffle in the chocolate and set onto a plate. Decorate with candy eyes, and let sit until it is completely set.
