The cookie dough is made by mixing a box of spice cake mix with pumpkin puree, eggs and vegetable oil, then fold in the M&Ms. Roll the cookie dough into balls and roll in a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.
Cake Mix Pumpkin M&M Snickerdoodle Cookies
Ingredients
- 1 ( 15 oz.) box spice cake mix
- 1/2 cup pumpkin puree
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup M&Ms
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together cake mix, pumpkin puree, eggs, and vegetable oil until smooth. Fold in the M&Ms. In a shallow dish, combine granulated sugar and ground cinnamon.
- Roll cookies into balls and roll in the cinnamon sugar mixture. Place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
