Cake Mix Halloween Butterscotch Cookies

Easy chewy cookies for Halloween made with a box of cake mix and filled with butterscotch baking chips. The cookie dough is made purple, orange and green with food coloring, making these easy cookies fun for a Halloween themed dessert.

The cookie dough is made by mixing a box of cake mix with eggs and vegetable oil until smooth. Divide the cookie dough into three bowls, mix one with purple food coloring, one with orange, and one with green. Fold butterscotch chips into each cookie dough. Take a small amount of each dough and roll together into balls. Place onto a baking sheet and bake until the cookies are fully cooked through.

Ingredients
  

  • 1 ( 15 oz.) box white cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • purple, orange, and green food coloring
  • 1 cup butterscotch baking chips, divided

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Divide the cookie dough into three bowls, mix one with purple food coloring, one with orange, and one with green.
  • Fold butterscotch chips into each cookie dough. Take a small amount of each cookie dough and roll together into balls. Place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
