Peanut Butter Banana Pudding Cookie Bars

Soft and chewy peanut butter cookie bars made with a box of banana pudding mix. Everyone will love the soft and chewy texture of the cookie bars and the delicious peanut butter and banana flavors. These easy chewy cookie bars are perfect for any holiday or occasion.

The cookie dough is quick and easy to make, it is made like a classic peanut butter cookie dough, except with the addition of banana pudding mix. Press the cookie dough into a greased square baking dish and bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Peanut Butter Banana Pudding Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 ( 3 oz.) box banana pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, and baking soda. In a large bowl, mix together butter, peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in the egg and vanilla extract until smooth. Add in the flour mixture until it is fully combined. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
