Quick and easy blondie cups made perfect for Earth day. Half of the batter is made green and the other half blue with food coloring. Everyone will love the chewy texture of the cups and delicious brown sugar flavors. They make the perfect easy dessert this Earth day.

The batter is quick and easy to make, all of the ingredients, except for the food coloring are mixed together in a large bowl until smooth. Divide the batter into two bowls, and add blue food coloring to one and green to the other. Place each batter into each paper lined muffin tin and swirl with a knife. Bake until the center comes out clean with a toothpick.

Ingredients
  

  • 1 cup butter, melted
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • green and blue food coloring

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, mix together butter, brown sugar, eggs, and vanilla extract until smooth. Add in the flour, salt, and baking powder until smooth.
  • Evenly divide the batter between two bowls. Mix blue food coloring into one bowl and green into the other. Evenly divide both batters into the paper liners. Swirl with a knife. Bake for 12-15 minutes.
