Only 5 ingredients are needed to make this cheesy casserole. This dish is so quick and easy to make and a great way to use up some frozen vegetables. Serve with pasta or rice with a side salad or your favorite vegetables for a quick dinner ready in less than 30 minutes.
Precooked chicken works great with this dish. You can use a bag of precooked and diced chicken, leftover cooked chicken or even rotissery chicken would taste great for this meal. Cook frozen mixed vegetables according to the package directions and mix it with the chicken and a can of cream of mushroom soup. You can also replace the cream of mushroom soup with a can of cream of chicken soup instead, if you prefer. Spread the chicken mixture out into a greased baking dish. Sprinkle with shredded cheddar cheese and top with a can of french fried onions. Bake until everything is heated through and the cheese has melted.
Cheesy Fried Onion Chicken Casserole
Ingredients
- 1 pound chicken, cooked and diced
- 1 ( 10 oz.) bag frozen mixed vegetables
- 1 ( 14 oz.) can cream of mushroom soup
- 2 cups shredded cheddar cheese
- 1 container french fried onions
Instructions
- Preheat oven to 350 F. Cook the frozen vegetables according to package directions. Mix the vegetables with the cooked chicken and cream of mushroom soup.
- Spread the chicken mixture into a large greased baking dish, sprinkle with shredded cheddar cheese and top with french fried onions. Bake for 20-25 minutes.
