The cookie dough is made like a classic peanut butter cookie dough, then it is divided into two bowls. Add green food coloring to half of the dough, and blue to the other half. Roll the cookie dough into balls and roll together. Flatten the cookie dough slightly and place one peanut butter cup on each cookie dough. Roll back into a ball and place onto a baking sheet. Bake until it is fully cooked through.

Ingredients
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- green and blue food coloring
- mini Reese's peanut butter cups
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix together butter, peanut butter, granulated sugar and brown sugar until fluffy.
- Add in the egg and vanilla extract and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Divide the cookie dough into two bowls. Add in green food coloring to one bowl and blue to the other.
- Take a small amount of each cookie dough and roll together into a ball. Flatten slightly and place one peanut butter cup in each cookie dough. Roll into a ball and place onto a ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
