Soft and chewy snickerdoodle cookies with a fun twist for Earth day. Everyone will love these easy and delicious cookies, they are filled with white chocolate chips. And half of the cookie dough is made green and the other half is made blue. The cookies are rolled together to make them look like the earth, and coated in a delicious cinnamon sugar mixture.
The cookie dough is made similar to a classic sugar cookie dough, except half of the dough is divided into another bowl, and made blue, and the other half is made green. White chocolate chips are mixed into each cookie dough. Roll each cookie dough into small pieces and roll together to form a ball. Roll each one into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.
Earth Day White Chocolate Chip Snickerdoodle Cookies
Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup white chocolate chips, divided
- green and blue food coloring
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in the egg and vanilla extract, and mix until smooth.
- Add in the flour mixture, and mix until it is fully combined. Place half of the cookie dough into another bowl. Mix blue food coloring into one bowl, and the green food coloring into the other bowl.
- Mix 1/2 cup chocolate chips into each bowl. In a shallow dish, combine granulated sugar and ground cinnamon. Take a small amount of each cookie dough and roll together into a ball. Roll each one into the cinnamon sugar mixture and place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
