Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

- 1 ( 15 oz.) box yellow cake mix
- 2 large eggs
- 1 teaspoon mint extract
- 1/2 cup vegetable oil

- 1 cup crushed Oreo cookies
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, mint extract, and vegetable oil until smooth. Add in the food coloring. Fold in the chocolate chips and Oreo cookies.
- In a shallow dish, combine granulated sugar and ground cinnamon. Roll the cookie dough into balls and roll in the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
