Reese’s Peanut Butter Cup Stuffed Cake Mix Gingerbread Cookies

Easy soft and chewy gingerbread cookies made with a box of spice cake mix. And with a chocolate peanut butter cup stuffed in each cookie. Everyone will love the soft and chewy texture of the cookies and the delicious chocolate peanut butter surprise in each one.

The only five ingredients that you need is a box of spice cake mix, eggs, vegetable oil, molasses, and mini Reese’s peanut butter cups. Mix all of the ingredients, except for the peanut butter cups together until smooth. Use a cookie scoop to place the cookie dough onto a large ungreased baking sheet. Place one peanut butter cup on each cookie and cover fully with cookie dough. Bake until each cookie is fully cooked through.

Ingredients
  

  • 1 ( 15 oz.) box spice cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup molasses
  • mini Reese's peanut butter cups

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix with eggs, vegetable oil, and molasses until smooth.
  • Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Place one Reese's peanut butter cup on each cookie dough. Cover with more cookie dough. Bake for 10-12 minutes.
