The cookie dough is made similar to a classic shortbread cookie, except for the addition of mint extract and green food coloring. Roll the cookie dough into balls and flatten each one slightly. Place the cookies onto a large ungreased baking sheet. Bake until the bottoms of the cookies are lightly browned.

Ingredients
- 1/2 cup butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon mint extract
- 2 cups all-purpose flour
- green food coloring
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together butter and powdered sugar until smooth. Add in the mint extract. Mix in the flour until it is fully combined.
- Add in the food coloring, and mix until it is fully green. Roll the cookie dough into balls, and flatten slightly, place onto a large ungreased baking sheet. Bake for 10-12 minutes.
