Andes Mint Brownie Cups

Chewy chocolate brownie cups baked with a Andes mint stuffed inside of each brownie cup. These easy brownies make the perfect easy treat to bake for any occasion, such as Christmas or St. Patrick’s day. Everyone will love the classic mint chocolate flavors.

The brownie batter is made like a classic brownie batter. You can also use a box of brownie mix and prepare it according to package directions. Divide half of the brownie batter into a paper lined muffin pan. Place one Andes mint in each cup and top with the remaining brownie batter. Bake until each brownie cup comes out clean with a toothpick.

Andes Mint Brownie Cups

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • Andes mints

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in the eggs, melted butter and vanilla extract and mix until smooth.
  • Evenly divide half of the batter into the paper liners. Place one Andes mint in each cup and cover with the remaining brownie batter. Bake for 15-20 minutes.
