Pumpkin Pudding Snickerdoodle Cookies

Soft and chewy pumpkin snickerdoodle cookies made with a box of vanilla pudding mix. The pudding mix makes these easy cookies more soft and chewy. Everyone will love the delicious pumpkin pie flavors in these cookies for a fun fall themed treat.

The cookie dough is made similar to a classic pumpkin cookie dough, except for the addition of a box of vanilla pudding mix whisked into the flour mixture. The cookie dough is rolled into balls, and rolled into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Pumpkin Pudding Snickerdoodle Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, baking soda, and pumpkin pie spice. In a large bowl, combine butter with pumpkin puree and both sugars until fluffy.
  2. Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. In a shallow dish, combine granulated sugar and ground cinnamon.
  3. Roll the cookie dough into balls, and roll into the cinnamon sugar mixture, place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
