Jello Cookie Bars

Chewy cookie bars made with a box of jello mix. These easy chewy cookie bars make the perfect easy treat to bake for just about any holiday or occasion. Everyone will love the chewy texture of the cookie bars and delicious flavors that the jello mix adds.

The cookie dough is made similar to a classic sugar cookie dough, except for the addition of dry jello mix folded into the cookie dough. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Jello Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ( 3 oz.) box jello mix

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix butter with sugar until fluffy. Add in the egg and vanilla extract and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Fold in the jello mix. Press the cookie dough into a greased square 8-inch baking dish. Bake for 20-25 minutes.
