Soft and chewy peanut butter cookie bars filled with chocolate chips. These easy peanut butter cookie bars also have a box of vanilla pudding mix mixed into the cookie dough. The pudding mix gives the cookie bars more of a soft and chewy texture. Everyone will love these easy chewy peanut butter and chocolate cookie bars.

The cookie dough is made similar to a classic peanut butter cookie dough, except with a box of dry vanilla pudding mix mixed into the flour mixture. Chocolate chips are also folded into the cookie dough. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Peanut Butter Chocolate Chip Pudding Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the chocolate chips. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
