White Chocolate Chip Lemon Cookie Bars

Chewy cookie bars filled with tons of delicious lemon and white chocolate flavors. Everyone will love these easy cookie bars for a delicious spring or summer themed dessert. The lemon and white chocolate flavors go together perfectly in these easy cookie bars.

The cookie dough is made similar to a classic sugar cookie dough, except instead of vanilla extract, lemon juice is used. White chocolate chips are also folded into the cookie dough. Press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

White Chocolate Chip Lemon Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 tablespoon lemon juice
  • 1 cup white chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in the egg and lemon juice and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Fold in the white chocolate chips. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
