Reese’s Peanut Butter Cup Stuffed Chocolate Snowball Cookies

Easy chocolate snowball cookies stuffed with mini Reese’s peanut butter cups in each cookie. These easy cookies have the same classic buttery flavor of a snowball cookie, but made with cocoa powder, and a mini Reese’s peanut butter cup is stuffed in each cookie. Everyone will love the fun chocolate peanut butter surprise in each cookie.

The cookie dough is made similar to a classic snowball cookie, except with the addition of cocoa powder mixed into the cookie dough. Roll the cookie dough into balls, and place one mini Reese’s peanut butter cup on each piece of dough. Roll into a ball, covering the chocolate completely. Place onto a large ungreased baking sheet, and bake until the bottoms are lightly browned. Roll each cookie into the powdered sugar.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • mini Reese's peanut butter cups
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together butter with powdered sugar until fluffy. Add in the vanilla extract, and mix until smooth.
  • Add in the flour and cocoa powder, and mix until it is fully combined. Roll the cookie dough into balls, and place one mini Reese's peanut butter cup on each piece of cookie dough. Roll into a ball and place onto a large ungreased baking sheet.
  • Bake for 10-12 minutes. Place the remaining powdered sugar into a shallow dish. Roll each cookie into the powdered sugar.
