Oreo Oatmeal Cookie Bars

Soft and chewy oatmeal cookie bars filled with crushed chocolate Oreo cookies. These easy oatmeal cookie bars are so quick and easy to make. Everyone will love these easy cookie bars for just about any holiday or occasion. They have a soft and chewy texture, and delicious chocolate flavor.

The cookie dough is made similar to a classic oatmeal cookie dough, except with the addition of crushed Oreo cookies folded into the cookie dough. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars.

Oreo Oatmeal Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup crushed Oreo cookies

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in the egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Fold in the crushed Oreo cookies. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
