Soft and chewy cookie cups made from a box of pineapple cake mix, and rolled in a mixture of granulated sugar and ground cinnamon, giving the cookie cups a delicious snickerdoodle flavor. Everyone will love these easy sweet pineapple cookie cups for any occasion.

The only five ingredients that you need is a box of pineapple cake mix, eggs, vegetable oil, granulated sugar, and ground cinnamon. The cake mix is mixed with eggs and vegetable oil until smooth. Roll the cookie dough into balls, and roll each one into the cinnamon sugar mixture. Place the cookies into a paper lined muffin pan. Bake until each cookie cup comes out clean with a toothpick.

Ingredients
  

  • 1 ( 15 oz.) box pineapple cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, mix together cake mix with eggs and vegetable oil until smooth.
  • In a shallow dish, combine granulated sugar and ground cinnamon. Roll the cookie dough into balls, and roll each one into the cinnamon sugar mixture. Place the cookies into the prepared muffin pan. Bake for 12-15 minutes.
