Soft and chewy chocolate cookies stuffed with mini Reese’s peanut butter cups. These easy cookies are perfect to bake for any holiday or occasion. Everyone will love the soft and chewy chocolate cookies, and the delicious chocolate and peanut butter flavor combination.

The cookie dough is made like a classic chocolate cookie dough, then one Reese’s peanut butter cup is placed on each piece of cookie dough. Roll the cookie dough into a ball, covering the peanut butter cups completely. Place the cookies onto a large baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Reese's Peanut Butter Cup Stuffed Chocolate Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Reese's peanut butter cups

Instructions
 

  • Preheat the oven to 350. In a medium bowl, whisk together flour, cocoa powder, salt, and baking soda. In a large bowl, combine butter with both brown and granulated sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Roll the cookie dough into balls, and place one peanut butter cup on each piece of cookie dough.
  • Roll the cookies into a ball, covering the chocolate completely. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
