Chocolate Cookie S’mores

Soft and chewy chocolate cookies sandwiched with marshmallows and chocolate chips. These easy cookie s’mores are like a classic s’more, but using a chewy chocolate cookie instead of graham crackers for the base. These easy cookie s’mores are perfect to bake this summer for a fun take on a classic s’more.

The cookie dough is made like a classic chocolate cookie dough, and baked as usual. After the cookies have baked, remove half of the cookies from the baking sheet. Place one marshmallow and some chocolate chips on each cookie on the baking sheet. Bake for just a couple of minutes, until the marshmallows begin to puff up. Remove from the oven, and sandwich with the remaining half of cookies.

Chocolate Cookie S'mores

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • marshmallows
  • chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, cocoa powder, salt, and baking soda. In another large bowl, combine butter and both brown and granulated sugar until fluffy. Add in egg and vanilla extract until smooth.
  • Add in the flour mixture, mix until it is fully combined. Roll the cookie dough into balls, and place them onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
  • Remove half of the cookies from the baking sheet. Place one marshmallow onto each cookie on the baking sheet, followed by chocolate chips. Bake for another 2-3 minutes. Remove from the oven, and sandwich with the remaining half of cookies.
