Soft and chewy classic sugar cookies stuffed with marshmallows and chocolate chips. These easy cookie s’mores make the perfect easy and tasty treat to bake this summer, or any time of the year that you want to enjoy a sugar cookie s’more.
The cookie dough is made just like a classic sugar cookie dough, and baked just as usual. After the cookies have baked, remove half of the cookies from the baking sheet, and place one marshmallow and some chocolate chips on each cookie on the baking sheet. Bake for just a couple of minutes, until the marshmallows begin to puff up. Remove the cookies from the oven and sandwich with the remaining cookies.
Sugar Cookie S'mores
Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- marshmallows
- chocolate chips
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract, and mix until smooth.
- Add in the flour mixture, mix until it is fully combined. Roll the cookie dough into balls, and place each one onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
- Remove half of the cookies from the baking sheet. Place one marshmallow and some chocolate chips on each cookie on the baking sheet. Bake for 2-3 minutes. Remove from the oven, and sandwich with the remaining cookies.
