Carrot Cake Mix Raisin Cookies

Soft and chewy cookies made with only four simple ingredients. These easy cookies are started from a box of carrot cake mix, and filled with raisins. It takes just a few minutes to put these easy cookies together. They make the perfect Easter or spring themed cookie that everyone will love.

The only four ingredients that you need for these cookies is a box of carrot cake mix, eggs, vegetable oil, and raisins. All four ingredients are mixed together in a large bowl until smooth. Use a cookie scoop to place cookies onto a large ungreased baking sheet. Bake until they are fully cooked through.

Ingredients
  

  • 1 ( 15 oz.) box carrot cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup raisins

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the raisins.
  • Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
