Butterfinger Oatmeal Cookie Bars

Soft and chewy oatmeal cookie bars filled with crushed chocolate butterfinger candy bars. These easy chewy cookie bars make the perfect treat to bake for any holiday or occasion. Everyone will love the soft and chewy texture of the bars, and the delicious oatmeal and butterfinger flavors.

The cookie dough is made similar to a classic oatmeal cookie dough, then crushed butterfinger candy bars are folded into the cookie dough. Evenly press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Butterfinger Oatmeal Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 1 cup quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup crushed butterfinger candy bars

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with both granulated and brown sugar until fluffy.
  • Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the crushed butterfinger candy bars.
  • Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
