Soft and chewy peanut butter cookie bars filled with chocolate butterfinger candy bars. These cookie bars are perfect to bake for when you have some leftover candy from Halloween or Christmas that you want to use up. The cookie dough is made similar to a classic peanut butter cookie dough, except for the addition of crushed butterfinger candy bars mixed into the cookie dough. Evenly press the cookie dough into a greased square baking dish, and bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.
Peanut Butter Butterfinger Cookie Bars
Ingredients
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup crushed butterfinger candy bars
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter and granulated sugar until fluffy.
- Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the crushed butterfinger candy bars.
- Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
