Lemon Chocolate Chip Snickerdoodle Cookies

Soft and chewy snickerdoodle cookies filled with chocolate and lemon flavors. These easy snickerdoodle cookies are made with lemon juice instead of vanilla extract, and filled with chocolate chips in the cookie dough. These easy cookies are perfect to bake for any spring or summer themed occasion, with the delicious lemon flavors.

The cookie dough is started out like a classic sugar cookie dough, except that instead of vanilla extract, lemon juice is used. Chocolate chips are then folded into the cookie dough. Roll the dough into balls, and roll each one into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Lemon Chocolate Chip Snickerdoodle Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 2 tablespoons lemon juice
  • 1 cup chocolate chips
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and lemon juice, and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Fold in the chocolate chips. In a shallow dish, combine granulated sugar and ground cinnamon.
  • Roll the cookie dough into balls, and roll each one into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
