Cake Mix Easter Sprinkle Brookie Cups

Soft and chewy cake mix cookies for Easter baked on chewy chocolate brownie cups. These easy and delicious brookie cups combines a classic brownie with a chewy cake mix cookie to create one delicious dessert. They are perfect to bake for a fun Easter themed treat.

The brownie batter is quick and easy to make, all of the ingredients are whisked together in a large bowl until smooth. Divide the brownie batter between a paper lined muffin pan. The cookie dough is made from a box of cake mix that is mixed with eggs and vegetable oil until smooth. It is rolled into balls, then rolled into a dish of Easter themed sprinkles. Place each cookie on a brownie cup. Bake until each brookie cup comes out clean with a toothpick.

Cake Mix Easter Sprinkle Brookie Cups

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup Easter sprinkles

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract, and whisk until smooth.
  • In a large bowl, combine cake mix with eggs and vegetable oil until smooth. Place the sprinkles into a shallow dish. Roll the cookie dough into balls, and roll each one into the sprinkles.
  • Evenly divide the brownie batter between the paper liners. Place one cookie dough ball over each brownie cup. Bake for 20-25 minutes.
