Soft and chewy chocolate brownies, combined with a chewy sugar cookie, made to look like the earth. Easy easy brookie cups combines two classic desserts to create one delicious treat that everyone will love. The cookie dough is colored blue and green and mixed together to look like the earth. Then baked over brownie batter. These brookie cups are perfect to bake for earth day this year.

The brownie batter is made by whisking all of the ingredients together in a large bowl until smooth. To save on time, you can use a box of brownie mix and prepare it according to package directions. For the cookie dough, it is made like a classic sugar cookie dough, then it is divided into two bowls. One half of the cookie dough is colored blue, and the other half is colored green. Take a piece of cookie dough from each color, and roll it into a ball. Evenly divide the brownie batter between a prepared muffin pan. Place one prepared cookie dough ball on each brownie batter. Bake until each brookie cup comes out clean with a toothpick.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • blue food coloring
  • green food coloring

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in melted butter, eggs, and vanilla extract. Mix until smooth.
  • In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined.
  • Divide the cookie dough into two bowls. Color one half blue with the blue food coloring, and the other half green with the green food coloring.
  • Evenly divide the brownie batter between the prepared liners. Take a piece of both colors of cookie dough, and roll into a ball. Place over the brownie batter. Bake for 20-25 minutes.
