S’mores Oatmeal Cookie Bars

Soft and chewy oatmeal cookie bars filled with tons of s’mores flavors. Mini marshmallows, crushed graham crackers and chocolate chips are mixed into these easy oatmeal cookie bars. They make the perfect easy summer treat that everyone will love.

The cookie dough is started like a classic oatmeal cookie dough, then crushed graham crackers, chocolate chips, and mini marshmallows. Press the cookie dough into a greased square baking dish. Bake until the center of the bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

S'mores Oatmeal Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed graham crackers
  • 1 cup chocolate chips
  • 1/2 cup mini marshmallows

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Fold in the crushed graham crackers, chocolate chips, and mini marshmallows. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
