Quick and easy cookie cups with all of the classic mint chocolate chip flavors, with crushed Oreo cookies added to the cookie dough. It adds more delicious chocolate flavor to these cookie cups that everyone will love as a fun St. Patrick’s day treat, or dessert for anytime of the year.
The cookie dough is started like a classic mint chocolate chip cookie dough, then crushed Oreo cookies are folded into the cookie dough. Evenly divide the dough between a paper lined muffin pan and bake until each cookie cup comes out clean with a toothpick.
Mint Chocolate Chip Oreo Cookie Cups
Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon mint extract
- green food coloring
- 1/2 cup crushed Oreo cookies
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy.
- Add in egg and mint extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Add in the green food coloring, and mix until it is fully green.
- Fold in the crushed Oreo cookies and chocolate chips. Evenly divide the cookie dough between the prepared liners. Bake for 12-15 minutes.
