Chewy chocolate brownies combined with a delicious soft and chewy mint chocolate chip cookie. These easy brookie cups combines these two delicious desserts. Everyone will love the combination of the flavor of the chocolate brownies with the mint chocolate chip cookie dough, filled with chocolate chips and crushed Oreo cookies. These make a fun and delicious St. Patrick’s day dessert that everyone will love.

The brownie batter is quick and easy to make, all of the ingredients are whisked together in a large bowl until smooth. You can also use a box of brownie mix and prepare it according to package directions. For the cookie dough, it is prepared similar to a classic mint chocolate chip cookie dough, except with the addition of crushed Oreo cookies folded into the cookie dough. Evenly divide the brownie batter into a prepared muffin pan. Top each one with the cookie dough. Bake until each cup comes out clean with a toothpick.

Mint Chocolate Chip Oreo Brookie Cups

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon mint extract
  • green food coloring
  • 1/2 cup crushed Oreo cookies
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract and mix until smooth.
  • In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in the egg and mint extract and mix until it is smooth.
  • Add in the flour mixture, and mix until it is fully combined. Add in the green food coloring, and mix until it is fully green. Fold in the crushed Oreo cookies and chocolate chips.
  • Evenly divide the brownie batter into the muffin cups. Divide the cookie dough over the brownie batter. Bake for 20-25 minutes.
