Soft and chewy mint cookies with crushed Oreo cookies mixed all throughout these cookies. These chewy cookies make the perfect easy dessert to bake this St. Patrick’s day. Everyone will love the mint taste combined with the chocolate Oreo cookie flavor.
The cookie dough is made similar to a classic sugar cookie dough, except that instead of vanilla extract, mint extract is used. And green food coloring is added to the cookie dough to make it green. Crushed Oreo cookies are folded into the cookie dough, and they are placed onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.
Mint Oreo Cookies
Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon mint extract
- green food coloring
- 1/2 cup crushed Oreo cookies
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and mint extract and mix until smooth.
- Add in the flour mixture, and mix until it is fully combined. Add in the green food coloring and mix until it is fully green. Fold in the crushed Oreo cookies.
- Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
