The cookie dough is started like a classic oatmeal cookie dough, then mint extract is added and the dough is colored green. Chocolate chips are also folded into the cookie dough. Press the dough into a greased square baking dish. Bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.
Mint Chocolate Chip Oatmeal Cookie Bars
Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 1/2 cups quick oats
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon mint extract
- green food coloring
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and mint extract, mix until smooth.
- Add in the flour mixture, and mix until it is fully combined. Add in the green food coloring and mix until it is fully green. Fold in the chocolate chips.
- Press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
