Two classic cookie flavors combined to create one delicious treat that everyone will love. These cookies are made like a classic mint chocolate chip cookie, then it is rolled into a mixture of cinnamon and sugar, giving these cookies a delicious snickerdoodle flavor. These cookies would make the perfect treat to bake this St. Patrick’s day for a fun treat.

The cookie dough is made like a classic mint chocolate chip cookie dough. Then it is rolled into balls, and each one is rolled into a shallow dish of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet, and bake until the cookies are fully cooked through.

Mint Chocolate Chip Snickerdoodle Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup chocolate chips
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and mint extract. Mix until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Add in the green food coloring until it is fully green. Fold in the chocolate chips. In a shallow dish, combine granulated sugar and ground cinnamon.
  • Roll each cookie dough into balls, and roll each one into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet. Bake for 10-12 minutes.
