Snowball cookies are a classic treat for Christmas, because once they are rolled in powdered sugar, they look like snowballs. These easy snowball cookies are covered in powdered sugar, and each one is filled with a mini peanut butter cups. Everyone will love these classic snowball cookies with a fun peanut butter and chocolate surprise in each cookie.

The cookie dough is make like a classic shortbread cookie dough, then it is rolled into balls, and each one is slightly flattened. Place one mini Reese’s peanut butter cup on each piece of cookie dough, and roll it into a ball, covering the chocolate completely. Place onto a baking sheet, and bake until the bottoms are lightly browned. Roll each cookie into a mixture of powdered sugar, and let cool completely before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • mini Reese's peanut butter cups
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine butter with sugar until fluffy. Add in the vanilla extract and flour, and mix until combined.
  • Roll the cookie dough into balls, and flatten each one slightly. Place one mini Reese's peanut butter cup on each piece of dough. Roll into a ball, covering it fully. Bake for 10-12 minutes.
  • Place the powdered sugar into a shallow dish. Roll the baked cookies into the powdered sugar.
