Soft and chewy peanut butter cookie bars filled with tons of delicious peanut butter and chocolate flavors. These cookie bars are stuffed with mini Reese’s peanut butter cups and chocolate chips. These easy cookie bars are perfect for just about any holiday or occasion. Everyone will love the delicious flavors together.

The cookie dough is made like a classic peanut butter cookie dough, then chocolate chips and mini Reese’s peanut butter cups are folded into the cookie dough. Press the cookie dough into a greased square baking dish and bake until the cookie bars come out clean in the center with a toothpick. Let cool completely before cutting into bars and serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mini Reese's peanut butter cups
  • 1/2 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter and sugar until fluffy.
  • Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the mini peanut butter cups and chocolate chips.
  • Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
