Soft and chewy cookie cups filled with oatmeal and raisins. These classic cookies are baked into muffin tins to form a cup shape, and they make easy serving to a group of people. Everyone will love these soft and chewy oatmeal cookie cups for just about every occasion.

The cookie dough is made like a classic soft and chewy oatmeal cookie dough, with the addition of raisins added into the cookie dough. Evenly divide the dough between a paper lined muffin pan and bake until the center of each cookie cup comes out clean with a toothpick. Let cool completely on a cooling rack before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup raisins

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy.
  • Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the raisins. Evenly divide the cookie dough between the prepared muffin pan. Bake for 12-15 minutes.
