Easy chewy chocolate brownies topped with a soft and chewy oatmeal cookie dough filled with fun Valentine’s day sprinkles. These chewy oatmeal brookies make the perfect dessert for when you can’t decide if you want a chewy chocolate brownie or a classic oatmeal cookie. Everyone will love these brookies for a fun Valentine’s day treat.

The brownie batter is quick and easy to make, all of the ingredients are whisked together in a large mixing bowl. You can also use a box of brownie mix instead to make it even easier if you want. For the cookie dough, it is made just like a classic oatmeal cookie, except with the addition of Valentine’s day themed sprinkles mixed into the cookie dough. Pour the brownie batter into a square baking dish, and top evenly with the cookie dough. Bake until the center comes out clean.

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Valentine's day sprinkles

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract and whisk until smooth.
  • In a medium bowl, whisk together flour, quick oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract and mix until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Fold in the sprinkles. Pour the brownie batter into a greased 8-inch square baking dish.
  • Evenly spread the cookie dough over the brownie batter. Bake for 25-30 minutes.
