Chewy chocolate brownies topped with a soft and chewy oatmeal cookie dough filled with dried cherries. These easy brookie cups are sweet and delicious topped with a chewy oatmeal cookie dough. It combines both classic desserts, a cookie and a brownie to make into one delicious that everyone will love.

The brownie batter is quick and easy to make with all of the ingredients mixed into a large mixing bowl until smooth. You can also use a boxed brownie mix instead if you would rather. The cookie dough is made like a classic oatmeal cookie dough, with the addition of dried cherries folded into the cookie dough. Divide the brownie batter into a lined muffin pan and top each one with the cookie dough. Bake until each cup comes out clean in the center. Let cool completely on a cooling rack before serving.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup dried cherries

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract until smooth.
  • In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Fold in the dried cherries.
  • Evenly divide the brownie batter between the prepared muffin pan. Add the cookie dough on top of each brownie batter. Bake for 20-25 minutes.
