Soft and fluffy brownie cups topped with a soft and chewy monster cookie dough filled with oats, peanut butter, chocolate chips, and m&ms. These brookie bites are a mix of a classic chocolate brownie, and a classic peanut butter oatmeal monster cookie. These brookie bites are perfect for any occasion, or for when you can decide if you want a brownie or a cookie.

The brownie batter is quick and easy to make by whisking all of the ingredients in a large bowl until smooth. You can also use a boxed brownie mix and prepare it according to package directions if you would rather. The monster cookie dough is a classic monster cookie filled with oatmeal, peanut butter, chocolate chips, and m&m candy. The brownie batter is divided into a lined muffin pan and then the cookie dough is divided over the brownie batter. Bake until the brookie cups come out clean with a toothpick.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup m&ms

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda.
  • Add in eggs, melted butter and vanilla extract, whisk until smooth. In a medium bowl, whisk together flour, oats, salt, and baking soda.
  • In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy. Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture and mix until it is fully combined.
  • Fold in the chocolate chips and m&ms. Evenly divide the brownie batter between the prepared muffin pan. Divide the monster cookie dough between muffin pan. Bake for 15-20 minutes.
