Christmas Peanut Butter Blossom Cookie Cups
Ingredients
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup Christmas sprinkles

Instructions
- Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
- Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the Christmas sprinkles.
- Evenly divide the cookie dough between the lined muffin tins. Bake for 15-20 minutes. Remove from the oven and top each cookie cup with one chocolate kiss.
