Soft and chewy peanut butter cookie cup topped with a chocolate caramel Rolo. Peanut butter blossom cookies are a classic to make around the holidays, they are usually made with chocolate kisses. Instead these cookie cups are topped with a Rolo candy. The added caramel flavor to the peanut butter and chocolate flavors go perfectly together. Everyone will love these fun blossom cookie cups.

The dough for these cookie cups is made just like a classic peanut butter cookie dough. The dough is divided into a paper lined muffin cup. Bake until each cookie cup comes out clean with a toothpick. Top each cookie cup with a unwrapped Rolo candy. Let cool completely on a cooling rack before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Rolos

Instructions
 

  • Preheat the oven to 350 F. Line a 12-cup muffin pan with paper liners. In a medium bowl, whisk together flour, salt, and baking soda.
  • In a large bowl, combine butter, peanut butter, granulated sugar, and brown sugar until fluffy. Add in the egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Evenly divide the cookie dough between the prepared liners. Bake for 15-20 minutes. Remove from the oven, and top each cookie cup with one Rolo.
