Soft and chewy gingerbread cookies filled with Christmas-themed sprinkles. These cookies are fun to make for the holidays. They have a soft and chewy texture and all of the classic flavors of gingerbread cookie. With sprinkles mixed into the cookie dough, giving these cookies a fun Christmas look to them. Everyone will love making these cookies together this Christmas.

For the cookie dough, it is made like a classic soft baked gingerbread cookie dough. Except Christmas-themed sprinkles are folded into the cookie dough. Roll the cookie dough into balls, and place them onto a large ungreased baking sheet, and bake until the center of the cookies comes out clean with a toothpick. Let them cool completely on a wire rack before serving.

Funfetti Gingerbread Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1/4 cup molasses
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Christmas sprinkles

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, cinnamon, ginger, and cloves.
  2. In another large bowl, combine butter, sugar, and molasses until fluffy. Add in egg and vanilla extract, and mix until smooth. Add the flour mixture in until it is fully combined.
  3. Fold in Christmas sprinkles. Roll the cookie dough into balls, and place them onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
