Soft and chewy cookies with delicious molasses flavors, similar to a soft baked gingerbread cookie. These easy cookies are so quick and easy to make, and have all of the delicious flavors of gingerbread with molasses mixed into the dough, along with cinnamon and ground ginger. These cookies are perfect for baking during the holiday season with the warm gingerbread spices.

The cookie dough is started like a classic sugar cookie dough, except with molasses added along with the butter and sugar. Cinnamon, ginger, and cloves are all added to the flour mixture. Once the dough is prepared, it is rolled into balls, and placed onto baking sheets at least 2-inches apart. Bake until the cookies come out clean with a toothpick. Let cool completely on a wire rack before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1/4 cup molasses
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, cinnamon, ginger, and cloves. In a large bowl, combine butter, sugar, and molasses and mix until smooth.
  • Add in egg and vanilla extract, and mix until smooth. Fold in the flour mixture, and mix until the flour is fully combined.
  • Roll the cookie dough into balls, and place them onto a large ungreased baking sheet at least 2-inches apart and bake for 10-12 minutes.
