Soft and chewy gingerbread cookies filled with chocolate m&ms. These cookies are perfect for baking this winter. They have all of the delicious flavors of a classic gingerbread cookie in a soft and chewy cookie. The m&ms go perfectly with the flavor of the gingerbread in these cookies. Everyone will love this fun twist on gingerbread cookies.

The dough for these cookies is made with a classic soft gingerbread cookie dough. The m&ms candy is folded into the cookie dough and rolled into balls. Place the cookies onto a large ungreased baking sheet. Bake until they come out clean in the center. Let the cookies cool on a wire rack completely before serving.

M&M Gingerbread Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup molasses
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup m&ms

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, cinnamon, ginger, and cloves. In another large bowl, combine butter, both sugars, and molasses until fluffy.
  2. Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the m&ms.
  3. Roll the cookie dough into balls, and place at least 2-inches apart onto an ungreased baking sheet. Bake for 10-12 minutes.
