Chocolate Chip Brookie Bites

A twist on classic brownies, these brookie bites are a mix of a chewy chocolate brownie and a classic chewy chocolate chip cookie. Brownie batter and chocolate chip cookie dough are baked together in a muffin pan, combining these two well loved desserts. They are baked in muffin cups, making them easy for serving a group of people. These brookie bites would be the perfect game day or super bowl treat to share with friends and family.

The brownie batter is simple to make, with all of the ingredients whisked together in the same bowl. But if you are short on time, you can also use a box of premade brownie mix and some refrigerated chocolate chip cookie dough. Divide your brownie batter between paper lined muffin cups. Top each brownie batter off with the chocolate chip cookie dough. Bake until the center of each brownie bite comes out clean with a toothpick.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. Line a 12-cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in melted butter, eggs, and vanilla extract, whisk until smooth.
  • Evenly divide the brownie batter between the prepared muffin cups. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with both sugars until fluffy. Add in egg and vanilla extract, mix until smooth.
  • Add in the flour mixture, and mix until it is fully combined. Fold in the chocolate chips. Evenly divide the cookie dough over the brownie batter in the muffin cups. Bake for 15-20 minutes.
