The chocolate and caramel flavor goes perfectly with the peanut butter in the cookie. Make these cookies the next time you want a change from the classic blossom cookies.
The dough for these cookies is a classic peanut butter cookie dough, after the dough is prepared roll them into balls, and place them onto a large baking sheet at least 2-inches apart. Bake until the cookies come out clean in the center. After they are out of the oven, top each cookie with one unwrapped chocolate Rolo. Let the cookies set on cooling racks before serving.
Rolo Blossom Peanut Butter Cookies
Ingredients
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- Rolos
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter and both sugars until smooth.
- Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Roll the cookie dough into balls, and place at least 2-inches apart onto ungreased baking sheets.
- Bake for 10-12 minutes. Remove from the oven, and top each cookie with one unwrapped Rolo.
