Soft and chewy cookie bars filled with the delicious flavors of a classic gingerbread cookie. It is filled with molasses, and gingerbread seasonings like cinnamon and ginger. All topped off with a mixture of cinnamon and sugar. Just like classic snickerdoodle cookies.These cookies are soft and delicious, they will be the perfect cookie bar to make this Christmas season.

The cookie dough for these cookie bars is similar to making soft gingerbread cookies, except to give them the traditional snickerdoodle flavor, cream of tartar is added. The cookie bars are also sprinkled with a mixture of cinnamon and sugar, just like classic snickerdoodle cookies. Bake the cookie bars until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Gingerbread Snickerdoodle Cookie Bars

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup molasses
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, cream of tartar, cinnamon, ginger, and cloves. In another large bowl, combine butter with both sugars and molasses, mix until fluffy.
  • Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Press the cookie dough into a greased 8-inch square baking dish.
  • In a small bowl, combine sugar and cinnamon. Sprinkle over the cookie dough. Bake for 15-20 minutes.
